Tomato coulis is a stable, non-perishable product obtained by crushing and sieving fresh tomatoes. Its stability is due to pre-bleaching and pasteurization processes to which the product is subjected. These two processes make it possible to avoid the deterioration of the product by enzymes and fungal microorganisms, as well as the destruction of pathogenic microorganisms.

The shelf life of tomato coulis is 2 years when it is kept away from moisture and at room temperature. Once opened, the product must be transferred from its packaging to a suitable container and kept in the refrigerator for no longer than 72 hours.
